Chickpea Noodles, How I Love Thee

For dinner last night, I decided to make "pasta". Unfortunately, pasta and bread often = the archnemesis of  my curvaceous self (thank you Italian heritage for my child-bearing hips and carb-loving self.) SO thanks to my mom, I have found an alternative noodle (other than a whole wheat noodle) that packs the protein in while satisfying the noodle-need. To add a bit of meat to the meal, I pulled small, pre-seasoned pork tenderloins. I cooked my noodles first. While the water was boiling and the oven was heating up, I grabbed my fresh ingredients. When the water had come to a boil, I put my chickpea noodles in, and started my veggie prep. I grabbed some fresh thyme from my little herb garden, chopped up fresh garlic, and mushrooms, mini-sweet pepper (orange), cherry tomatoes, and finished off a bag of fresh spinach that was starting to go bad. Easter Baking Frenzy

On Easter weekend, in between church, enjoying the sunny outdoors with the pup, cleaning, and family lunch, I was in a baking frenzy. A while back I had purchased King Arthur Flour's Unbleached Whole Wheat Flour and a small package of their organic unbleached all-purpose flour. After searching for several weeks for yeast-free recipes, not being content with what I was finding and wanting to make, I caved and picked up instant yeast from Aldi. After scouring Pinterest and Google, I stumbled on a recipe for Honey Oat Whole Wheat Bread. Oh. My. Gosh. Not only was this an easy recipe to follow, but the smell as it was baking...so good. I ended up making 2 loaves, of course the 2nd turned out much better than the first (which is great because it wasn't for me!) Making this without a KitchenAid or hand mixer made me a tad bit nervous initially. Long time, no write

I am BACK! I can no longer use the excuse of graduate school and internship and moving twice in six months as reasons not to keep up with my Blog. So, quick update: board certification exam passed (Nov '15), graduated from grad school (April '16,) moved back home & took a part-time music therapy job & weekend receptionist job while job searching for a full-time (April-June '16), went from a FL girl back to a MI girl when I got my full-time position (Nov '16), and I now have a dog (Nov '16). Originally I had created this blog to document my world travels; I had huge aspirations. I am slowly realizing that "Going Somewhere" doesn't necessarily have to be a physical journey, but can be a mental, emotional, or spiritual journey as well. While I may not be exploring the ends of the Earth in my current stage of life, I am exploring myself and my new role as an "official adult." As an "official adult" my thoughts are occup...
